Spinach and Chorizo Salad

I'm partial to a salad. I mean, I'm not all about one everyday, because this girl has to eat her pesto pasta and bowl of sweetcorn every other day, and of course chips and burritos, they come into the equation too. BUT when I get a good salad in my life, I find myself eating it over and over again. And the best part for me is that I can make enough to cover my lunches for the week (actually, I just pile up my plate and cut down on the lunches...) and feel like I'm winning at life.

I recently found this delightful (and gluten free) recipe and felt blown away by all the colours in a bowl - so much so that I picked up all the ingredients, added in some more myself and ate it for a whole week continuously. Because, vegetables.

Fresh Spinach
Butternut Squash (I add in sweet potato sometimes too)
Red Peppers
Grated Courgette
Cherry Tomatoes

Quite simply roast the butternut squash and sweet potato for 40 minutes or so in the oven (drizzled in oil for extra taste!) and prepare the other vegetables in the meantime. I tend to fry off my spinach but only for a few minutes, as I still like a little bit of crunch and place in your bowl (or plate!). I then fry off some peppers and onions together and occasionally add in sweetcorn, purely because I LOVE SWEETCORN. Again, add that into your bowl, and begin frying off your chorizo in garlic.
Whilst your choziro is frying, grate some courgette and cut into small chunks the feta. I also chop my cherry tomatoes in half because they're easier to scoop up with other vegetables! Once your chorizo is fried, add to your bowl and sprinkle over the courgette, feta and finish off with the tomatoes.
If you're feeling adventurous, why not add some Tzatziki or Pesto to the salad for a complete and utter taste sensation - and there you have it. Easy and tasty salad.

That's just how I like my food life to be. Easy. And tasty!
