Freestyle Challenge

Just like the rest of the world, I spend most of my day thinking about food. When I wake up, I think about lunch. Once I've eaten lunch I think about dinner.
Like all the time.
I even dream about food. Food is good.
And there are some days when I just enjoy something so much, that I eat it again, and again. Take last week.. I made the same dinner for four days running.
Because I really really enjoyed it.
So that's all that matters right? And it was healthy (sweet potato, butternut and five lots of veg FYI), so you know...If it ain't broke don't fix it. But actually, Lurkpak did a recent study which turns out that three in ten people have the same lunch everyday at work (looking at you mama!) so I guess I'm not alone..
Because Lurpak are pretty awesome (and have the cute little musician man), there'll be a food truck heading around London starting today, giving out free lunches at the following:

YEP. free lunches - think avocado, feta, bacon, kale. You name it, it'll be in that sandwich.
And with that, Lurpak have challenged a few of us bloggers to go freestyle for a month.
Basically in a sense, mix up those lunchtimes and eat something different.
Make brave and bold creations as they suggested.
And, you know what? I'm all for that. Because as much as I love my leftover dinners for lunch (guilty!) I thought that this week was the perfect time to make something different, and equally tasty! And gluten free of course.
Being gluten free is sometimes a pain because..
Bread.
Yep. Nice tiger loaf...
I always dream of tiger loaf bread, and bagels. And crumpets. And cat shaped thins.
But armed with some GF ciabatta's I decided to make what my mama always has rustled up in her fridge - Tomato bruschetta, with peppers, onions and garlic and topped off with some fresh feta.
And you know something else? It was heavenly. 
I genuinely really enjoyed it for my lunch (I try to tell myself it wasn't down to the copious amounts of feta, but I'd be lying otherwise..) and found that it was just what my tastebuds were after.
Although it's a good job I'm single.
Because, lots of garlic.

So Lurpak, I'll be blaming you if everyone starts crossing the road during my lunch hour..

  3. Bruschetta is the best snack or meal, but I put fresh basil in! Load that garlic up girl... there is nothing better than plenty of garlic!

  5. I've actually made a point of mixing up my lunches this week, and today's offering was smoked salmon, prawns and cream cheese - so good!
